Yohei Hnaya created sushi 300 years ago in the isolation period of "Edo". He used seasonable fish from Edo Ocean, which he sliced to put on one, bite size, vinegared, rice ball. This was a departure from Japanese eating habits of that time. In the beginning, a chef only made sushi part-time. This megre beginning started a new taste sensation and in no time became a major success throughout Japan. This culinary specialty eventually caught on in the Western world and is recognized as being prepared in the Edo tradition. Many years of training and preparation has led to the development of culinary experts known as Sushi Chefs. We believe in providing our customers with the highest quality products while using the freshest ingredients, and for those already smitten, or those just curious about this unique cuisine we’ll work diligently to introduce sushi as an outstanding Japanese food experience.
